Wine making : Made from the pressing of red grapes with white juice, the berries are pressed as soon as they arrive in the cellar. This allows for a limited colour in the juice. Left a very short time in contact with the skin of the grapes, the must is delicately coloured. The fermentation is done at a low temperature for keep the freshness of the aroma.
